Fond De Veau Lié

Ingredients (for 2.5 Liters)

Fond Brun de Veau

Mushroom trimmings

Chervil

Madeira Wine

Cornstarch or Arrowroot

Procedure

  1. -Bring fond to a simmer, add chervil and mushroom trimmings, and reduce over high heat by 1/4, skimming well.

  2. -Dilute cornstarch or arrowroot in Madeira. Add to the simmering fond until it reaches the proper consistency. Strain through a chinois. Keep warm for service or cool down and then refrigerate.
