Mayonnaise

Ingredients

1 Egg Yolk

10 g Mustard

150 ml  Vegetable Oil

Vinegar or Lemon Juice to taste

Salt and Pepper

Procedure

  1. -male sure all ingredients are at room temperature.

  2. -Combine the yolk, salt and mustard and whisk for 20 seconds.

  3. -Add the oil drop by drop in the beginning until you have a thick emulsion, whisking all the while.

  4. -When thick, add the rest of the oil in a thin steady stream.

  5. -Add vinegar or lemon juice to taste and adjust seasonings.
