Procedure

  1. -Place 5 g of butter is a black steel pan. Salt and pepper the bottom and heat the pan.

  2. -Break the eggs into a ramekin to check quality. Don’t break the yolks.

  3. -Gently slide the eggs into the hot pan and cook over medium heat until the white coagulates without blistering.
