Jamaican Jerk Chicken

Jerk is a style of cooking native to Jamaica in which meat is dry-rubbed or wet marinated with a very hot spice mixture called Jamaican jerk spice

Ingredients

4 chicken breasts

1 medium onion, quartered

1 garlic clove, halved

2 chiles, quartered

1/3 C soy sauce

1/4 C red wine vinegar

2 T brown sugar

1 T vegetable oil

1 t ground all spice

1/2 t thyme

1/2 t pepper

1/4 t ground cloves

1/4 t cinnamon

Procedure

In blender. blend all but chicken to a coarse paste

Marinate chicken fro several hours

Remove chicken and boil marinate several minutes

Grill chicken, baste with jerk
