Quiche aux Champignons

Mushroom Quiche

There are many variants of quiche, including a wide variety of ingredients.

Ingredients

Pastry for 9 inch pie

1 1/2 C (6 oz) swiss cheese, shredded, divided

1 T flour

1/2 Lb sliced mushrooms

1 small onion, diced

4 eggs, beaten

2 C half-and-half

1/2 t dry mustard

1/4 t salt

Procedure

Line a 9 inch quiche dish with pastry. Trim excess pastry around edges. Fold the edges under, and flute.

Prick bottom and sides of pastry with a fork. Bake at 400°F for 3 minutes; remove from oven, and gently prick with fork. Bake an additional 5 minutes.

Sauté mushrooms and onion in 2 tablespoons vegetable oil; drain.

Combine cheese and flour, sprinkle evenly into the pastry shell. Top with mushrooms and onion. Set aside.

Combine eggs, half-and-half. dry mustard, and salt, stirring well. Pour mixture into pastry shell.

Bake at 325°F for 60 to 70 minutes or until set. Let stand 10 minutes.
