Sweet Potato Pie
This recipe is for 6 pies baked in 9" pie plates.
Ingredients
8 large sweet potatoes, boiled and peeled
3 C sugar
1 C brown sugar
1/3 C vanilla
4 T cinnamon
2 sticks of butter
1/2 t nutmeg
1 T salt
12 eggs
2 cans evaporated milk
Procedure
Mash sweet potatoes. Add additional ingredients. Mix with mixer.
Pour into pie crusts. Leave one-half inch at top for expansion.
Bake 350ºF oven 30 to 45 minutes depending upon size of pie plate.
